The paper aims to determine the total concentration of polyphenolic compounds and anthocyanins in various samples such as wine, nectar, coffee and Noni juice, by UV-VIS spectrometery. The analysis of these compounds involves more aspects: determination of polyphenolic substances by the Folin-Ciocalteu method, determination of anthocyanins by the sodium bisulfite method for wine samples.
